Lunch box: courgette quiche with courgette salad

This week, I would like to share with you two recipes that are perfect match for Lunch box. The first one will be my favorite courgette quiche with a small variation at the dough level. The second one is a salad of fresh courgette which is perfect to eat with the quiche, all in one amazingly tasty lunch box.

I remember the first time that I ate a courgette quiche, at this time I was a child and I was not really keen to the courgette. But my parents decided to have a small vegetable garden and courgettes were perfect to grow up, so one day, the garden gave us plenty of this "awful" vegetable. My mother knew that it was not my favorite vegetable and she decided to ask to her friends how do they eat courgette? and that it is the courgette quiche arrived on my life. Since this day, it is one of my favorite quiche, it is really smooth. Few weeks ago I decided to re-invente the recipe, I didn’t change the mixture but I have amended the dough, I decided to use a vegetable dough (made from a vegetable flour). That is a quite new product that I found last time when I came back to France. The flavor of the vegetable dough is spinach and the taste is great addidtion to the courgette.

In order to change with the traditional salad that I serve with quiche, I decided to give a try to a courgette salad. I read a lot of different recipes and decided to not cook the courgettes and I think that is the best way to eat them. In order to add some flavour I added roasted pine nuts and bacon pieces. This courgette salad is really tasty and it changes to the usual green salad with tomatoes.

Lunch box: Gnocchis with vegetables

The sun is back and that is really great news. I am still really tired by our long winter but seeing the sun when I wake up is marvellous. So, I decided to put some colour on my dishes, still hot but really colourful and tasty.  This week I will share with you the recipe of Lunch box: Gnocchis with vegetables.

I have used some leftover in my fridge for creating this weekly recipe. In fact, I am so busy at the moment that I didn’t take time to order my grocery and that is quite good because I just cook with all the leftover on the fridge, so no waste. Every time, I place an order, I order some gnocchis because it is a long conservation product and you can use it when you are in a rush. But this time, I wanted to spend a little bit more time in my kitchen and make a more complicated recipe with my gnocchis that my usual one: Gnocchis with cheese and pesto. I had cherry tomatoes and courgettes in my fridge because I went to the market on Thursday. In fact, I have discovered recently an amazing market near my place where they sell bowls of fruits and vegetable for £1, unbeatable :).

I decided to cook the courgette in square piece in a pan. I have peeled the cherry tomatoes in order to let them really melt with the gnocchis. Everything in a pan with some piece of mozzarella, then served with fresh basilic, really amazing taste and texture.

Christmas Starters

What’s cooking in Pauline-Cuisine ?

Nearly at Christmas, my head is full of ideas for cooking an unforgettable Christmas dinner for my three guests. I have already bought in France a Foie gras, and now I am looking for a nice way to present it, but one more time I have a lot of ideas and I can’t decide which ways is the best… one more week to decide…. but can’t wait for a magic Christmas :)

For this countdown to Christmas, I will share with you two nice starter with salmon. Salmon again, yes of course, since I go to the fresh fish market every month, I cook a lot of salmon. These two starters are easy and quick to prepare. There are beautiful in a table display.
The first starter is a simple smoked salmon canapé with soft cheese and drill or lump roe. The second starter is a verrine with salmon and the greek preparation Tzatziki, that is really fresh and the fact to add lump roe in it add a nice color touch. I really enjoy these two starters, try them and don’t hesitate to leave a comment.

In another background, a daily recipe, because yes we are going to Christmas really quickly but we still need to eat on a daily basis, here it is a quick soup recipe: courgette soup, a nice green color with a tasty soft taste.
