Cookies with chocolate chunk

What’s going on in Pauline-Cuisine ?

It is really enjoyable this warm weather! I rediscover the pleasure to do some long walk nearby the water canal in the East London. It is a really peaceful walk with a lot of animals to see. But after walking for one hour or two, it is time to eat something. So last weekend, after this sunny and warm walk, I decided to bake quickly some cookies. It has been a long time since I haven’t took the time to make some.

It takes only 15 minutes to bake and a quick 10 minutes to make and trust me the taste is far better than the one which can be found in the supermarket. I was used to make them when I was a student, so I really enjoy making them again. They didn’t last long and the few cookies leftover were a nice addition such as dessert for my Monday lunch box.

Pancakes and Crêpes :)

What’s cooking in Pauline-Cuisine ?

When I was on the underground this afternoon (on Monday) for going back home, I discovered that tomorrow is the Pancake day, so nice :).

A new occasion for cooking my favorite dessert: pancakes/crêpes, a new one because in France, we celebrate on February 2nd La Chadeleur where we cook crêpes. So I have decided to share with you different recipes of Crêpes: buckwheat pancakes, sweet pancakes and light crêpes. All versions are really tasty and take the opportunity of this day to test several recipes. In order to avoid the common, but really tasty and enjoyable, filling of chocolate or jam, try to do your own whipped cream. Which taste do you prefer: vanilla, mango or chocolate? It is time to go shopping for buying flour, eggs, sugar and milk and cook tasty pancakes, so delicious :) 

For the other days of the week and with the frozen weather, you can opt for a soup. This week, you can try the soup of mushrooms and chestnuts . My auntie gave me this recipe and I have tried it after Christmas when it was easy to find chestnuts. This soup is really delicious and innovative. After tasting various way of serving it, I recommend to serve it in “verrine” as a starter instead of a big bowl as I have pictured it.

Recipe of the week: Chicken and mushrooms with Béchamel

What’s new in Pauline-Cuisine this week?

   
This week, I give you the recipe for a Chicken and mushrooms with béchamel “gratin”, it is a really French recipe and it is easy to do and tasty to eat. In this recipe, I give you the recipe for doing your homemade béchamel. I remember, when I was a student in Grenoble, my mother gave me a recipe for a dish with béchamel and she said me, buy a can of béchamel, it is easy to use and you can’t failed the recipe. But, when I wanted to buy the Béchamel in the supermarket, I didn’t find it, so I asked to a vendor and she replied me: do it yourself. But, I had no idea of how to do a béchamel, so I decided to cook something else. Then, I visited a friend in Germany and she explained me how to do a Béchamel for her lasagna, I discovered that it is so easy to do it. And now, I do my Béchamel homemade and I can decide the quantity of butter or the amount of cream that I want.

At the end of the week, it will be Easter and I would like to give you some chocolate recipes for making your own Easter chocolate, but I am not as good as I want for doing it. I hope I will improve my technique and try to be ready for the next Easter. Meanwhile, I went to France the last weekend, and I found a great book about Easter chocolate, I hope it will help me. Unfortunately for the moment this beautiful book is still on its bag, I don’t have enough time to try it, but I will try to find time until Easter because I have some desserts to prepare for a friend who invite me at a Easter party.
Anyway, for Easter, you can make the chocolate and coconuts mousse, it is so delicious and it is different to the traditional Easter chocolate.
