Mushrooms pasta with pesto and walnuts

What’s going on in Pauline-Cuisine?

First of all, I would like to wish you a great Happy Easter. The perfect time of the year for eating chocolate without thinking, I hope you find your chocolate eggs on the garden, I have already ate them :)

This week, I would like to share with you a new recipe: mushrooms pasta with pesto and walnuts that I created after spending some holidays in the mountains. In fact, two weeks ago, I was on holiday with my family in a small ski station: Aussois near by the Italian border. The weather was really nice and it was quite relaxing to have a break over there where the time seems to have been stopped. As I am not a huge fan of ski and snow, I decided to have a look at the village and try to find mew cooking products. It was quick mission as the shops are not always open and are really small. I ended my walk on the small mini market near by the hotel and I finally found an attractive product: mushrooms pasta.

Back to London, I planned to give a try to this product. As I like to cook chestnut mushrooms, I decided to cook this pasta with tasteful kind of mushrooms. When I was cooking the chestnut mushrooms, I was not really convinced about the recipe that I have imagined. So I looked around in my kitchen in order to find the magic ingredient which suits with my idea of the recipe: I decided to add pesto and walnuts. And on top of that, I added some small pieces of dried Italian ham. The smell in the kitchen was really great. The taste of the mushrooms pasta is not as strong as I imagine, it was quite discreet but the recipe is really delicious and easy to make.

Lunch box: salad with 2 cabbages

The sun is back and that is a great news because the salads are back too. This week, I have enjoyed cooking fresh lunch boxes and eat them in the office’s terrace. Yes, I need to confess that I am really lucky to have this terrace which allows me to have sun bath during lunch time. Salads are perfect match with that. As I would like to celebrate sun, I wanted to create something new to eat. I had a quick review of some cook books, I picked up some idea of dishes and idea of sauces, then rushed to my kitchen in order to create my new lunch box: salad with 2 cabbages.

I am not a huge fan of cabbages but this mix of colors is so attractive. The crispy of the cabbage, fresh raped carrots and beansprot is so delicious. But the “must have” of this salad is the sauce.  I was fed of the basic vinaigrette but I was too tired to do a complicated sauce. So the fact to use lemon juice instead of vinegar was really great idea. The mix of mustard + lemon juice is so tasty that you don’t need to add pepper or salt.
For sure, I will eat a lot cabbages salad as I like the texture and the mix of colors add a joyful touch to my lunch break.

Amazing lunch box and two potatoes soup


What’s cooking in Pauline-Cuisine?

I hope you are fine and you have enjoyed the recipes already online; I was quite busy these last weeks.  One more hard working week at work and then I will be not as busy as these few last weeks.
I didn’t have put new recipes online but I have continuing to experiment new cooking thing in my kitchen. Just for a quick overview, I have tried a chocolate short-crust pastry that was amazing with strawberry, I will try with pears and I will probably share the recipe with you. Another good discovery was a quick lunch box with couscous semoula and carrots… and so many more delicious edible experiences.

With the snow and the frozen weather, I would like to share with you a really nice soup with two potatoes: charlotte potatoes and sweet potatoes. I have tried this one the first time when I was in charge of cooking for the homeless (one of my charity activity) and it was a success. The key success is a right balance with the water and the milk at the end because if it is not right, you will eat a mash and you are not going to drink a creamy soup.

The second recipe that I would like to share with you is a lunch box. In these frozen weather time, it is quite hard for me to keep awake all the day and it become more and more hard to wake up on the morning, so each evening I take the opportunity of commute across London for thinking about a delicious lunch box, something appealing that can help me to go to work. So it was during a underground journey that I had decided to do a gnocchis-pesto lunch box. The colours are nice, the gnocchis are good to eat and keep you awake all the day long. The value-added of this lunch box is that is really easy and quick to do (only take 5 minutes for cooking the gnocchis), that is really great when you go to bed really early on the evening and you have difficulty to wake up on the morning. Passion fruits cheesecake

Hi everybody,



It was a long time without news, but I was quite busy with my wedding (a really wonderful day) and my new job and first job in London. This weekend, it is the first time when I can sit down enough time for sharing with you two new recipes: Light passion fruits cheesecake and Endives salad with walnuts.

   

When I tried a cheesecake for the first time, I was really disappointed by the taste. It was a pity because it is quick to make but you have to cook in the oven for 50 minutes. After this first disappointment, I let it down the fact to make some cheesecake. But it was really hard in England; most of the cakes are cheesecake. I decided to give me another try. I added some flavor to the yogurt, added a crispy biscuit and a passion fruits topping. The result was amazing. I did these small cakes for my last guests and they enjoyed it. The second recipe is a starter. I fed up of soup; indeed the last days were really hot. I am now in the mood to create new salads as a starter or as a dish. Moreover, now, I am back to work and I need to prepare my lunch box every days. So, I will nearly post a lot of fabulous and tasty recipes for doing fresh lunch box for your summer lunch at work.
